- 1 pkg. instant mashed potatoes (4 servings)
- 1 (10 oz.) pkg. frozen chopped spinach, cooked and drained
- 1/2 c. sour cream
- dash of pepper
- 1 lb. fish fillets
- 1/4 c. milk
- 1/2 c. herb seasoned stuffing mix, crushed
- 2 Tbsp. butter, melted
- lemon slices
Directions

1Prepare potatoes according to package directions, except reduce water by 1/4 cup.

2Stir in drained spinach, sour cream and pepper. Turn into a 10 x 6 x 2-inch baking dish.

3Dip one side of each fillet in milk, then in stuffing mix.

4Fold fillets in half, coating side out.

5Place atop potato mixture; drizzle with melted butter.

6Bake, uncovered, at 350° until fish flakes easily when tested with fork, 30 to 35 minutes.

7Serve with lemon slices. Makes 4 or 5 servings.
