- 1/4 c. chopped onion
- 4 to 5 Tbsp. butter
- 2 c. cooked rice
- 2 Tbsp. lemon juice
- 1 slightly beaten egg
- salt and pepper
- 1 lb. frozen fish fillets, partially thawed
Directions

1Cook onion in 2 tablespoons butter until slightly tender; stir into rice.

2Mix in lemon juice, egg and a dash of salt.

3Place half of the fillets in a buttered baking dish; season with salt and pepper.

4Top with rice mixture, then remaining fillets.

5Brush with remaining butter. Sprinkle with salt and pepper.

6Bake at 375° for about 35 minutes.
