Fish Burgers

  • 1 pound white fish fillets boneless skinless, coarsely chopped
  • 1 tablespoon chopped cilantro or parsley
  • 2 teaspoons grated lemon peel
  • 4 new potatoes sliced
  • 1/4 cup mayonnaise
  • 2 teaspoons chives chopped
  • 4 bread rolls split
  • salad greens to serve

    Preheat the oven to 400°F. Lightly grease and line a baking pan with parchment paper.

    Process fish, cilantro and lemon peel in a food processor until a coarse paste forms. Shape into 4 patties. Refrigerate.

    Meanwhile, place sliced potatoes on prepared pan. Lightly spray with no stick cooking spray. Season to taste. Bake for 20 mins, turning halfway through cooking, until golden.

    Heat oil in a large skillet on low heat. Cook patties for 3-5 mins each side or until cooked through.

    Combine mayonnaise and chives. Spread on bottom of each roll. Layer with lettuce leaves, fish burgers, potato slices and roll tops.
