Ingredients

  • 1 lb. fish meat
  • 1 Tbsp. salt
  • celery stalks, parsley, peppercorn and 1 small onion
  • 12 (2-inch) saltines
  • 1/4 lb. corn margarine
  • 1 Tbsp. corn oil (about)
  • 1 Tbsp. mayonnaise
  • pinch of mustard
  • 1 tsp. minced parsley
  • 1 tsp. Worcestershire sauce
  • salt and pepper to taste

Directions

    Place fish in pan and cover it with water, salt, some celery stalks, parsley, peppercorns and a small onion.

    Poach slowly and cook just until fish flakes easily.

    Cool and debone.

    Mix together remaining ingredients and make into cakes.

    Put corn oil on griddle and brown cakes on both sides.

    Any extra can be put on wax paper and frozen.
