  • 8 oz. poached or steamed white fish
  • 8 oz. mashed potatoes
  • 1 egg
  • seasoning
  • 1 to 2 tsp. chopped fresh parsley
  • 1 oz. seasoned flour
  • 3 to 4 Tbsp. crisp bread crumbs
  • 2 to 3 oz. shortening or oil

    Flake fish with fork.

    Add potatoes, egg, parsley and seasoning.

    Mix well.

    Divide into 8 round cakes.

    Coat in seasoned flour, then in egg, then in bread crumbs.

    Heat fat and fry fish cakes 2 to 3 minutes each side until golden brown.

    Drain on paper towels.

    Garnish with lemon and parsley.
