- 8 oz. poached or steamed white fish
- 8 oz. mashed potatoes
- 1 egg
- seasoning
- 1 to 2 tsp. chopped fresh parsley
- 1 oz. seasoned flour
- 3 to 4 Tbsp. crisp bread crumbs
- 2 to 3 oz. shortening or oil
Directions

1Flake fish with fork.

2Add potatoes, egg, parsley and seasoning.

3Mix well.

4Divide into 8 round cakes.

5Coat in seasoned flour, then in egg, then in bread crumbs.

6Heat fat and fry fish cakes 2 to 3 minutes each side until golden brown.

7Drain on paper towels.

8Garnish with lemon and parsley.
