Ingredients

  • 1/4 lb. beef bacon or imitation bacon, cut in small pieces
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 c. sliced cooked carrots
  • 1 (8 oz.) can whole kernel corn or frozen corn
  • 2 c. boiling water
  • 1/2 c. white wine
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1/8 tsp. white pepper
  • 1/4 tsp. paprika
  • 1/8 tsp. tarragon
  • 2 lb. frozen fish

Directions

    Cook bacon.

    Add celery, onion and garlic.

    Saute for 3 minutes.

    Add remaining ingredients, except salt.

    Cover and cook in large pot until fish flakes easily.
