Ingredients

  • 1 medium onion, chopped
  • 2 carrots, diced
  • 1 stalk celery, sliced
  • 2 Tbsp. butter or margarine, divided
  • 1 (16 oz.) pkg. frozen fish fillets
  • 2 potatoes, peeled and diced
  • 1 bay leaf
  • 1 tsp. salt
  • 1/4 tsp. thyme
  • 1/4 tsp. pepper
  • 1 c. dry white wine or water
  • 2 c. milk
  • 1 Tbsp. chopped parsley (optional)

Directions

    In 3-quart saucepan, over medium heat, saute onion, carrots and celery in 1 tablespoon butter or margarine.

    Add fish, potatoes, bay leaf, salt, thyme, pepper and wine.

    Cover; simmer 20 minutes.

    With fork, break fish into chunks.

    Add milk and remaining butter.

    Discard bay leaf.

    Sprinkle with parsley. Makes 4 servings.
