Fish Chowder

Ingredients

  • 1 large onion, thinly sliced
  • 1 c. water or chicken broth
  • 1/2 lb. fish fillet (cod, whiting or your choice), cut in 1-inch pieces
  • 2 Tbsp. chopped parsley
  • 1 pkg. frozen succotash
  • 2 Tbsp. margarine
  • 3 medium potatoes, cut in 1/2-inch cubes
  • 3 c. milk
  • 1/2 tsp. dill weed
  • salt and pepper to taste

Directions

    Saute onion in margarine until browned.

    Add 1 cup water and potatoes.
  3. 3
    Boil gently about 10 minutes or until potatoes are almost tender.

    Add fish and succotash and cook 5 minutes, until fish flakes and vegetables are tender.

    Stir in milk, parsley, dill weed, salt and pepper.

    Heat to serving temperature.
