- 1/4 lb. salt pork, rind removed and cut into 1/2-inch pieces
- 3 Tbsp. butter
- 1 c. coarsely chopped onion
- 1 1/2 to 1 3/4 lb. haddock or cod
- 2 c. milk
- 2 c. evaporated milk
- 2 c. water
- 1 bottle clam juice
- 2 c. potatoes, cut in 1/2-inch pieces
- 1/4 tsp. crushed peppercorns
- 1/8 tsp. thyme
- 2 tsp. salt
Directions

1In large pot, brown salt pork in 1 teaspoon butter.

2Add onion and stir and cook.

3Pour in water and clam juice; bring to a boil over moderate heat.

4Add potatoes and pepper; turn to low heat and simmer, partially covered, 15 minutes.

5Add fish and simmer until fish flakes and breaks up.

6Add milk, remaining butter, thyme and salt.

7Stir; bring to simmer over moderate heat.
