Ingredients

  • 1/4 lb. salt pork, rind removed and cut into 1/2-inch pieces
  • 3 Tbsp. butter
  • 1 c. coarsely chopped onion
  • 1 1/2 to 1 3/4 lb. haddock or cod
  • 2 c. milk
  • 2 c. evaporated milk
  • 2 c. water
  • 1 bottle clam juice
  • 2 c. potatoes, cut in 1/2-inch pieces
  • 1/4 tsp. crushed peppercorns
  • 1/8 tsp. thyme
  • 2 tsp. salt

Directions

    In large pot, brown salt pork in 1 teaspoon butter.

    Add onion and stir and cook.

    Pour in water and clam juice; bring to a boil over moderate heat.

    Add potatoes and pepper; turn to low heat and simmer, partially covered, 15 minutes.

    Add fish and simmer until fish flakes and breaks up.

    Add milk, remaining butter, thyme and salt.

    Stir; bring to simmer over moderate heat.
