- 1/2 c. celery, sliced
- 1/2 c. green pepper, sliced
- 1/2 c. okra, sliced
- 1/2 c. onion, sliced
- 1 (8 oz.) can tomato sauce
- 1/2 tsp. chili powder
- 1/4 tsp. garlic
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- 1 lb. mild white fish
- cooked rice
Directions

1Preheat oven to 350°.

2Bake fish 10 minutes, covered.

3Combine vegetables, tomato sauce and chili powder in a saucepan.

4Simmer 10 minutes adding a little water if necessary.

5Take fish out of oven and flake.

6Add vegetables. Top with herbs. Return to oven to simmer.

7Serve over rice.
