Fish Dinner Casserole

Ingredients

  • 1/2 c. margarine
  • 1 small onion, thinly sliced
  • 1 1/2 Tbsp. flour
  • 1 1/2 c. milk
  • 1 pkg. frozen fish fillets (cod, haddock or perch), cut in small pieces
  • 1 small can shrimp, drained or 12 oz. pkg. frozen shrimp
  • 1 tsp. parsley, chopped
  • 1 small can sliced mushrooms
  • 3 raw potatoes, sliced

Directions

    Melt butter in saucepan.

    Add onion and cook until soft. Remove pan from heat; stir in flour and then milk.

    Return to heat.

    Cook, stirring constantly, until smooth and thickened. Arrange fish and shrimp in buttered casserole.

    Sprinkle with parsley and mushrooms.

    Pour half of the sauce over fish.

    Top with layer of sliced potatoes and pour remaining sauce over all. Bake in 350° oven for 40 minutes or until potatoes are done.
