- 1 lb. fish fillets
- 1/4 tsp. pepper
- 1 Tbsp. lime juice
- 1 tomato, cut into 1/2 inch slices
- 1 Tbsp. parsley, snipped
- 1 tsp. salt
- 1 small onion, thinly sliced
- 1 Tbsp. vegetable oil
Directions

1If fish fillets are large, cut into 5 or 6 serving pieces. Arrange fish in ungreased square baking dish 8 x 8 x 2-inches. Sprinkle with salt and pepper.

2Top with onions and tomato slices. Sprinkle with lime juice, oil and parsley.

3Cover and cook in oven at 375° for 15 minutes.

4Uncover and cook until fish flakes easily with fork, about 15 minutes longer.

5Garnish with lime wedges, if desired.

6Makes 5 or 6 servings.
