  • 1 lb. fish fillets
  • 1/4 tsp. pepper
  • 1 Tbsp. lime juice
  • 1 tomato, cut into 1/2 inch slices
  • 1 Tbsp. parsley, snipped
  • 1 tsp. salt
  • 1 small onion, thinly sliced
  • 1 Tbsp. vegetable oil

Directions

    If fish fillets are large, cut into 5 or 6 serving pieces. Arrange fish in ungreased square baking dish 8 x 8 x 2-inches. Sprinkle with salt and pepper.

    Top with onions and tomato slices. Sprinkle with lime juice, oil and parsley.

    Cover and cook in oven at 375° for 15 minutes.

    Uncover and cook until fish flakes easily with fork, about 15 minutes longer.

    Garnish with lime wedges, if desired.

    Makes 5 or 6 servings.
