- 1 1/2 lb. fillets
- 1/2 tsp. salt
- pepper to taste
- 3/4 c. sour cream
- 1/2 c. grated Parmesan cheese
- 1 Tbsp. chives
- 1/4 c. fine dry bread crumbs
- paprika
- watercress (optional)
Directions

1Wash and pat fillet dry with paper towels.

2Arrange in greased baking pan. Sprinkle salt and pepper over fish.

3Mix sour cream with cheese, chives and crumbs.

4Spread over fish.

5Dust with paprika.

6Bake at 450° for 10 minutes per inch of thickness. Garnish with watercress.

7One-half-inch thick- cook 5 minutes. One-inch thick - cook 10 minutes.

8One and one-half-inch thick - cook 15 minutes.

9Measure thickness by measuring thickest point of fillet.
