Fish Fillet Bake

Ingredients

  • 3/4 c. chopped onion
  • 1/2 c. chopped celery
  • 3 Tbsp. olive oil
  • 1/2 c. raw, long grain rice
  • 1 (29 oz.) can Italian plum tomatoes
  • 1/8 tsp. cayenne pepper
  • 1 garlic clove, crushed
  • 2 lb. white fish fillets

Directions

    Saute onion and celery in oil.

    Stir in rice and cook until rice turns golden brown.

    Then add tomatoes (cut tomatoes in half lengthwise), pepper and garlic; simmer slowly.

    Place fish in bottom of buttered 9 x 12-inch baking dish.

    Spoon rice mixture over fish fillets.

    Cover with aluminum foil and bake in 400° oven 45 to 55 minutes or until rice is tender.
