Fish Fillet Bake

- 3/4 c. chopped onion
- 1/2 c. chopped celery
- 3 Tbsp. olive oil
- 1/2 c. raw, long grain rice
- 1 (29 oz.) can Italian plum tomatoes
- 1/8 tsp. cayenne pepper
- 1 garlic clove, crushed
- 2 lb. white fish fillets
Directions

1Saute onion and celery in oil.

2Stir in rice and cook until rice turns golden brown.

3Then add tomatoes (cut tomatoes in half lengthwise), pepper and garlic; simmer slowly.

4Place fish in bottom of buttered 9 x 12-inch baking dish.

5Spoon rice mixture over fish fillets.

6Cover with aluminum foil and bake in 400° oven 45 to 55 minutes or until rice is tender.
