  • 2 c. flaked cooked fish
  • 1 tsp. onion juice
  • salt and pepper
  • chopped parsley
  • 1 c. medium white sauce
  • cracker crumbs
  • 1 egg, beaten

Directions

    Mix fish flakes with seasonings; add to white sauce and chill thoroughly.

    Mold into croquettes; roll in cracker crumbs.

    Dip into slightly beaten egg and roll in crumbs again.

    Fry in hot deep fat (375°) about 3 minutes or until brown.

    Makes 6 medium croquettes.
