- 2 c. flaked cooked fish
- 1 tsp. onion juice
- salt and pepper
- chopped parsley
- 1 c. medium white sauce
- cracker crumbs
- 1 egg, beaten
Directions

1Mix fish flakes with seasonings; add to white sauce and chill thoroughly.

2Mold into croquettes; roll in cracker crumbs.

3Dip into slightly beaten egg and roll in crumbs again.

4Fry in hot deep fat (375°) about 3 minutes or until brown.

5Makes 6 medium croquettes.
