  • 1 lb. cooked fish
  • 3 eggs, separated
  • 3 Tbsp. flour
  • salt and pepper
  • 1/8 tsp. minced garlic
  • 1 Tbsp. minced parsley

Directions

    Mash fish.

    Beat egg yolks until light and thick.

    Add flour, salt, pepper, garlic and parsley to fish.

    Add egg whites, beaten to a froth.

    Drop by tablespoonfuls into hot deep fat (360° to 370°).

    Fry until brown.
