- 3 eggs, separated
- 3 Tbsp. flour
- salt and pepper
- 1/8 tsp. minced garlic
- 1 Tbsp. minced parsley
Directions

1Mash fish.

2Beat egg yolks until light and thick.

3Add flour, salt, pepper, garlic and parsley to fish.

4Add egg whites, beaten to a froth.

5Drop by tablespoonfuls into hot deep fat (360° to 370°).

6Fry until brown.
