Ingredients

  • 1 1/3 pounds tuna mixed, swordfish, snapper, and/or cod, cut into 1 inch chunks
  • 12 shallots small, halved
  • 1 red pepper large, deseeded and chopped coarsely
  • 1 yellow pepper large, deseeded and chopped coarsely
  • 2 medium zucchini sliced thickly
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon dried oregano
  • flat-leaf parsley chopped, optional

Directions

    Thread the fish and vegetables, alternating, onto skewers.

    Combine the oil and oregano in a small bowl.

    Cook the skewers on heated oiled grill or grill pan, basting with oil mixture, for about 5 mins or until browned all over and just cooked through. Sprinkle with parsley, if desired.
