- 1 1/3 pounds tuna mixed, swordfish, snapper, and/or cod, cut into 1 inch chunks
- 12 shallots small, halved
- 1 red pepper large, deseeded and chopped coarsely
- 1 yellow pepper large, deseeded and chopped coarsely
- 2 medium zucchini sliced thickly
- 1/4 cup extra virgin olive oil
- 1 tablespoon dried oregano
- flat-leaf parsley chopped, optional
Directions

1Thread the fish and vegetables, alternating, onto skewers.

2Combine the oil and oregano in a small bowl.

3Cook the skewers on heated oiled grill or grill pan, basting with oil mixture, for about 5 mins or until browned all over and just cooked through. Sprinkle with parsley, if desired.
