Ingredients

  • 4 white fish fillets
  • 1 small can whole tomatoes
  • 1 small onion, diced
  • 1/4 c. chopped green pepper
  • 2 Tbsp. chopped celery
  • 3 cloves chopped garlic
  • 3/4 to 1 tsp. salt
  • fresh ground pepper to taste
  • 1 Tbsp. chopped fresh parsley
  • pinch or 2 of brown sugar
  • 1 Tbsp. chopped fresh basil
  • dash or 2 or 3 of Tabasco

Directions

    Wash and dry fish fillets and set aside.

    In heavy saucepan, sprayed with cooking spray, saute onion, celery and green pepper until tender.

    Add remaining ingredients.

    Stir to chop up tomatoes and cook until sauce has reduced by approximately 1/3. (Sauce should not be thin and runny, but not quite as thick as a medium white sauce.)
