- 1 lb cod fish fillet
- 1 cup milk
- 1 egg
- 2 cups flour
- 2 cups panko breadcrumbs
- 2 cups vegetable oil
Directions

1Cut cod into manageable sized pieces.

2This is about 2-3 inches in length.

3Place flour in one bowl.

4Mix milk and egg in a second bowl.

5Place Panko in a third bowl.

6Dredge fish pieces in flour.

7Dredge fish pieces in the milk/egg mixture.

8Coat fish pieces with Panko.

9Let the fish sit for about 5 minutes before cooking.

10Place 2 cups vegetable oil in a large skillet.

11Heat skillet on high.

12Place fish in oil only after it is hot.

13Cook fish about 3 minutes on each side or until done.

14Remove from oil and place on paper towel to remove any excess oil.
