Fish Salad

Ingredients

  • 1/2 lb. small shrimp, cooked
  • 1/2 lb. small scallops, cooked
  • 1/2 lb. crab meat (or imitation pollack)
  • 1 can sardines (in olive oil), drain off oil
  • 2 Tbsp. mayonnaise (fat-free)
  • 1/2 tsp. dill weed
  • 1/2 tsp. pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 2 stalks celery
  • 1 small onion
  • 1 small green pepper
  • 1/2 c. roasted red peppers

Directions

    Put all seafood into a bowl.

    Chop celery, onions, green pepper and roasted red peppers finely.

    Put into same bowl; mix thoroughly with fish and all spices.

    Add mayonnaise.

    If 2 tablespoons is not enough, add until you have consistency you want.

    Serve over crisp romaine lettuce.
