Fish & Spinach Roll Ups

- 4 whiting fresh or frozen, or founder fillets
- 2 packages spinach 10 oz. each frozen leaf, cooked, drained
- salt
- pepper
- 1/4 cup butter
- 1/2 lemon
Directions

1Thaw fillets, if frozen. Spread fillets evenly with spinach, sprinkle with salt and pepper, roll up like jelly rolls and place, seam side down, in greased shallow baking pan. Sprinkle rolls with salt and pepper.

2In a small bowl mix butter and lemon juice and brush heavily over fish. Bake in a preheated hot oven (400 degrees) for 20 to 25 minutes or until fish turns white and flakes easily. For the rest of the meal -- bake refrigerated biscuits along with the fish rolls. Cook white and wild rice mix on top of range. Serve fish rolls on a bed of rice with buttered biscuits. Add raw carrot sticks, tomato wedges, parsley sprigs and lemon slices.
