Ingredients

  • 1 whole chicken (2 1/2 lb.), cut
  • 1/3 c. soya sauce
  • 2 Tbsp. vegetable oil
  • 1 small onion chopped
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. crushed anise seeds
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground cloves

Directions

    Place chicken in a shallow glass dish.

    Mix remaining ingredients together and pour over chicken.

    Cover and refrigerate for 2 hours.

    Occasionally spoon marinade over chicken.

    Remove chicken from marinade but preserve marinade.

    Place chicken in an ungreased glass baking dish.

    Brush marinade on chicken.

    Cook uncovered at 350°F for 1 hour, occasionally brushing with marinade.

    Serve with mashed potatoes.
