  • 1 teaspoon olive oil
  • 1/2 onion peeled and minced
  • 1 red bell pepper seeded and diced
  • 1 chayote squash chopped
  • 15 ounces diced tomatoes roasted
  • 1 liter water
  • salt
  • ground black pepper
  • 2 zucchinis chopped

Directions

    Place a large pot on the stove and pour in the olive oil. Add the onion and bell pepper and cook for 5 minutes or until the onion becomes transparent.

    Add the squash, tomatoes, and water. cover the pot and cook at medium heat for 15 minutes.

    Add a pinch of salt and black pepper and the zucchini. Cook for another 5 minutes. Serve hot.
