- 1/2 onion peeled and minced
- 1 red bell pepper seeded and diced
- 1 chayote squash chopped
- 15 ounces diced tomatoes roasted
- 1 liter water
- salt
- ground black pepper
- 2 zucchinis chopped
Directions

1Place a large pot on the stove and pour in the olive oil. Add the onion and bell pepper and cook for 5 minutes or until the onion becomes transparent.

2Add the squash, tomatoes, and water. cover the pot and cook at medium heat for 15 minutes.

3Add a pinch of salt and black pepper and the zucchini. Cook for another 5 minutes. Serve hot.
