- 1 c. uncooked rice
- 2 1/2 c. water
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. shredded carrot
- 2 Tbsp. chopped parsley
- 1/2 bay leaf
- 1 Tbsp. salt-free butter
Directions

1Heat all ingredients in a large saucepan to boiling; stir once or twice.

2Reduce to simmer, cover tightly and cook until rice is tender (15 to 20 minutes).

3Do not uncover during this time. Remove pan from heat and remove bay leaf.

4Fluff with a fork. Cover and let stand for 5 more minutes.
