  • 1 c. uncooked rice
  • 2 1/2 c. water
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. shredded carrot
  • 2 Tbsp. chopped parsley
  • 1/2 bay leaf
  • 1 Tbsp. salt-free butter

Directions

    Heat all ingredients in a large saucepan to boiling; stir once or twice.

    Reduce to simmer, cover tightly and cook until rice is tender (15 to 20 minutes).

    Do not uncover during this time. Remove pan from heat and remove bay leaf.

    Fluff with a fork. Cover and let stand for 5 more minutes.
