- 2 eggs
- 3 egg whites
- 1/2 c. (low-fat 2%) milk
- 1 (12 oz.) can evaporated skim milk
- 3 Tbsp. sugar
- 1 tsp. vanilla
- 1/2 tsp. maple extract
- 1/2 tsp. ground cinnamon (for garnish)
- 1/8 tsp. ground nutmeg
- 1/8 tsp. salt
Directions

1Preheat oven to 250°.

2Blend well all ingredients in a blender.

3Pour mixture into baking dish or 4 individual ramekins. Sprinkle generously with cinnamon.

4(If using ramekins, place on baking sheet for easier handling.) Place in preheated oven to bake about 1 hour or until set.

5May be served warm, at room temperature or cold.
