  • 34 lb boneless skinless chicken breasts or 34 lb boneless skinless chicken thighs, cut into chunks
  • 12 apple, cored,cut into chunks
  • 1 tablespoon butter, cut into chunks
  • 1 clove garlic, minced
  • 12 teaspoon fresh gingerroot, minced
  • 1 teaspoon sherry wine
  • 1 teaspoon lemon juice
  • salt and pepper
  • aluminum foil

    Combine all ingredients in a bowl.

    Place in the center of a piece of foil.

    Flatten ingredients slightly.

    Bring the sides together and fold down center, roll edges of foil in.

    Bake in the oven at 425F seam side up for 20 minutes or on a medium-hot grill for 12 minutes.
