Ingredients

  • 175 grams butter
  • 175 grams demerara sugar
  • 100 grams golden syrup
  • 75 grams plain flour
  • 1/2 tsp bicarbonate of soda
  • 250 grams oats
  • 1 tbsp cinnamon powder
  • 100 grams raisins
  • 1 Egg beaten
  • 2 tbsp boiling water

Directions

    Preheat fan oven to 170c

    Line flat baking tray with parchment paper

    Add the butter, sugar and syrup into a pan and heat until the sugar is melted

    Remove from heat and add the flour, bicarbonate of soda, oats, cinnamon powder and raisins.

    Add the beaten egg and boiling water and mix well

    Dampen hands and make into flattened balls placing on the baking tray allowing plenty of room for expanding

    Bake for 12-15 minutes or until golden brown and still soft
