Flavored Sherbet

Ingredients

  • 1 envelope unflavored gelatin
  • 1/2 c. skimmed milk
  • 1 1/2 c. evaporated milk
  • 1 c. sugar
  • 1 tsp. grated lemon peel
  • 1/2 c. lemon juice or 1 c. pureed fruit
  • 2 egg whites, stiffly beaten

Directions

    Soften gelatin in 1/2 cup skim milk.

    Heat evaporated milk with the sugar.

    Add the softened jello and stir until dissolved. Cool.

    Slowly add the lemon peel and juice to the cooled gelatin mixture, stirring constantly.

    Pour into ice cube trays and place in the freezer.

    When mixture is mushy, remove and fold in stiffly beaten egg whites.

    Return to freezer until firm.

    Remove and put in a chilled bowl.

    Beat until fluffy.

    Re-freeze and serve.
