  • 3 eggs
  • 1/4 c. milk
  • 1 1/2 c. unsifted all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. vegetable oil
  • 1 1/2 c. cooked corn kernels
  • vegetable oil (for frying)

Directions

    In a bowl, beat eggs with milk, flour, baking powder, salt and 1 tablespoon oil.

    When smooth, fold in corn.

    Pour enough oil into a large skillet to make it 1 inch deep and heat to 360°. Drop in corn mixture by heaping tablespoonfuls.

    Fry 2 to 3 minutes or until brown on one side, then turn and cook on the other side for 2 or 3 minutes.
