- 3 eggs
- 1/4 c. milk
- 1 1/2 c. unsifted all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. vegetable oil
- 1 1/2 c. cooked corn kernels
- vegetable oil (for frying)
Directions

1In a bowl, beat eggs with milk, flour, baking powder, salt and 1 tablespoon oil.

2When smooth, fold in corn.

3Pour enough oil into a large skillet to make it 1 inch deep and heat to 360°. Drop in corn mixture by heaping tablespoonfuls.

4Fry 2 to 3 minutes or until brown on one side, then turn and cook on the other side for 2 or 3 minutes.
