  • 1 cup flax seed meal
  • 2 teaspoons baking powder
  • 14 teaspoon salt
  • 12 cup coconut oil (melted) or 12 cup any oil or 12 cup butter
  • 4 eggs
  • 13 cup water
  • artificial sweetener
  • 12 cup walnuts
  • 14 teaspoon xanthan gum (optional)

Directions

    Preheat oven to 350F.

    Butter a 12 hole muffin tin.

    Mix dry ingredients together well.

    Add wet ingredients and mix thoroughly.

    fold in walnuts.

    Put in muffin tins (about 1/2 to 2/3 full) and bake for about 20 minutes.
