Flemish Pork Chops

  • 6 pork chops 1-inch thick
  • 4 tbsp. butter
  • 1 large onion, thinly sliced
  • 3/4 c. white wine
  • 3/4 c. chicken stock or water
  • salt and pepper to taste
  • 2 Tbsp. flour
  • 1 Tbsp. sharp prepared mustard

    Brown chops in 2 tablespoons butter.

    Place in 2-quart casserole with lid.

    Add onion slices to skillet in which chops were browned and cook until transparent.

    Add wine and stock; cook 1 minute.

    Pour the liquid and onions over chops.

    Season with salt and pepper.

    Bake at 300° for 1 1/2 hours or until tender.
