- 8 oz lasagne noodles
- 15 oz ricotta
- 2 cups spinach
- 2 eggs
- 1 jar spaghetti sauce
- 2 cans tomato paste
- 1 lb shredded mozzarella
- 1/2 lb mushrooms
- 1 carrot
- 2 shallots
- 2 cloves garlic
- 2 tbsp parmesan
- 1 bunch fresh basil
- salt & pepper
Directions

1Preheat oven to 400F

2Cook and drain pasta according to instructions

3Cut spinach into thin strips

4Cut mushrooms into slices

5Chop shallots and basil

6Grate carrot

7Lightly beat eggs

8Combine ricotta, spinach, eggs, salt & pepper

9Saute garlic, shallots, mushrooms, carrot, basil

10Combine spaghetti sauce and tomato paste

11Spread spaghetti sauce mix at bottom of pan

12Layer with lasagna, 1/2 of ricotta, 1/2 of mushrooms, spaghetti sauce, and mozarella

13Repeat layers once

14Top with lasagne, spaghetti sauce, and mozarella

15Bake uncovered for 35-40 minutes
