- 1/2 c. olive oil
- 1/4 c. red wine vinegar
- 1 clove garlic, crushed
- 1/2 tsp. salt
- dash of pepper
- dash of sugar
- 1 pt. cherry tomatoes, halved
- 1 lb. spinach
- 2 heads Belgian endive, curly endive or iceberg lettuce
- 4 slices bacon, fried crispy and crumbled
- 2 hard-boiled eggs, chopped or sieved
Directions

1Mix together in small bowl the oil, vinegar, garlic, salt, pepper and sugar.

2Add tomatoes and let marinate for 1 hour or longer.

3Wash spinach and tear into pieces.

4Separate endive into leaves.

5Refrigerate both.
