*Florentine Salad

Ingredients

  • 1/2 c. olive oil
  • 1/4 c. red wine vinegar
  • 1 clove garlic, crushed
  • 1/2 tsp. salt
  • dash of pepper
  • dash of sugar
  • 1 pt. cherry tomatoes, halved
  • 1 lb. spinach
  • 2 heads Belgian endive, curly endive or iceberg lettuce
  • 4 slices bacon, fried crispy and crumbled
  • 2 hard-boiled eggs, chopped or sieved

Directions

    Mix together in small bowl the oil, vinegar, garlic, salt, pepper and sugar.

    Add tomatoes and let marinate for 1 hour or longer.

    Wash spinach and tear into pieces.

    Separate endive into leaves.

    Refrigerate both.
