- 1 lb. flounder
- 1 large onion, sliced
- 1 stalk celery, thinly sliced
- 1 (16 oz.) can tomatoes, drained
- Parmesan cheese
- 2 Tbsp. corn oil
- thyme
Directions

1Saute onion and celery in corn oil.

2Crush the whole tomatoes and simmer for approximately 5 minutes.

3Arrange the flounder in a 9 x 12-inch baking dish.

4Arrange tomato mixture on top of the flounder.

5Sprinkle thyme and Parmesan cheese on top of the flounder.

6Bake at 350° for 20 minutes.
