  • 4 small unpeeled tomatoes, each cut into 4 (1/4-inch thick) slices
  • vegetable cooking spray
  • 4 (4 oz.) flounder fillets
  • 1/4 c. fine dry bread crumbs
  • 1 Tbsp. grated Parmesan cheese
  • 1 1/2 tsp. chopped fresh dill
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper
  • 1/8 tsp. ground red pepper
  • 1 Tbsp. margarine, melted
  • fresh dill sprigs (optional)

Directions

    Place tomato slices in a 13 x 9 x 2-inch baking dish coated with cooking spray. Arrange fillets on top of tomatoes.

    Combine bread crumbs and next 5 ingredients in a bowl.

    Stir in margarine. Sprinkle evenly over fillets.

    Bake at 425° for 13 minutes or until fish flakes easily when tested with a fork.
