Fluffy Lemon Pie

  • 1/2 c. sugar less 1 Tbsp.
  • juice of 1 lemon
  • 3 egg yolks
  • 3 egg whites
  • 1 baked pie crust
  • grated peel of 1 lemon

Directions

    Beat sugar, juice, egg yolks and lemon peel together.

    Cook in double boiler until thick.

    Cool.

    Beat egg whites and fold into mixture.

    Put into pie crust and bake at 350° until slightly brown.

    Serve with whipped cream on top.
