- 2 eggs
- 2 cups flour
- 1-1/2 cup skim milk
- 2 tbsp. packed brown sugar
- 4 tbsp. vegetable oil
- 3 tsp. baking powder
- 3/4 tsp. baking soda
- 1-1/2 tsp. cream of tartar
- 1/2 tsp. salt
- Vegetable oil for cooking
Directions

1Beat eggs with hand beater in large bowl until fluffy.

2Beat in remaining ingredients except vegetable oil for cooking, until smooth (beat by hand).

3For thinner pancakes, stir in additional 1-2 tablespoons milk.

4Heat griddle or skillet over medium heat or to 375F.

5Grease griddle with oil if necessary.

6Pour batter onto hot griddle.

7Cook pancakes until puffed and dry around edges.

8Turn and cook other side until golden brown.
