- 3 carrots
- 3 stalks celery
- 1 small onion
- 2 medium potatoes
- 4 chicken breasts or thighs
- butter or margarine
- salt and pepper to taste
Directions

1Preheat oven to 350°.

2Cut carrots, celery, onion and potatoes into bite size pieces.

3Wash chicken under cold water and pat dry. Place 1 piece of chicken and 1/4 of the vegetables on each of 4 pieces of aluminum foil.

4Add a pat of butter to each and season with salt and pepper.

5Bring foil up over chicken and fold edges tightly.

6Bake 1 hour or until chicken and potatoes are tender.
