- 1 rib roast (at least 8 lb.)
- prepared mustard, salt and pepper
Directions

1During the morning, preheat oven to 325°.

2Rub mustard into the red exposed meat.

3Place in oven for 1 1/2 hours.

4Turn off oven; do not open door.

5Half an hour before you are going to serve the roast, turn oven back on to 325°.

6Your meat will be uniformly medium-rare from the fatty side right down to the bone. If you wish to have meat a little less rare, cook at 350° instead of 325°.
