  • 1 rib roast (at least 8 lb.)
  • prepared mustard, salt and pepper

    During the morning, preheat oven to 325°.

    Rub mustard into the red exposed meat.

    Place in oven for 1 1/2 hours.

    Turn off oven; do not open door.
  5. 5
    Half an hour before you are going to serve the roast, turn oven back on to 325°.

    Your meat will be uniformly medium-rare from the fatty side right down to the bone. If you wish to have meat a little less rare, cook at 350° instead of 325°.
