- 1/4 cup butter
- 1 tablespoon flour
- 1 1/2 cups half-and-half
- 1 cup shredded mozzarella cheese or 1 cup scamorze cheese
- 1 cup shredded fontina
- 1/2 cup shredded sharp provolone cheese
- 1/4 cup grated parmesan cheese
- 1/4 teaspoon pepper
- 2 tablespoons parsley
- 1 lb fresh fettuccine
Directions

1In 3 quart saucepan, melt butter,stir in flour until blended; cook 30 seconds.

2Gradually stir in half and half- cook,stirring,until mixture boils and slightly thickens.

3Stir in all cheeses,salt and pepper.

4Boil fettuccine till al dente.

5Drain and pour into large bowl or round casserole dish.

6Mix in cheese sauce along with parsley, until well blended.

7Serve immediately.
