  • 4 eggs, separated
  • 1 c. sugar
  • 4 Tbsp. cold water
  • 1 tsp. lemon extract
  • 1 c. cake flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 Tbsp. cornstarch

    Beat egg yolks until thick and lemon colored.

    Add sugar gradually.

    Add cold water and mix thoroughly.

    Sift flour before measuring, then sift 4 times with salt, baking powder and cornstarch.

    Add eggs and sugar; mix.

    Fold in stiffly beaten egg whites and bake in ungreased tube pan in slow 320° oven for 1 hour.
