- 600 g white fish fillets
- 12 teaspoon finely grated lime rind
- 1 garlic clove, crushed
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon lime juice
- pepper
- fresh cilantro, to garnish
- avocado relish
- tomatoes, wedges
- lime wedge
Directions

1In a small bowl,combine the grated lime rind, garlic, olive oil, cumin, ground corinader, and pepper (to taste), to make a paste.

2Spread the paste thinly on both sices of the fish.

3Heat a nonstick, ridged skillet until hot and press the fish into the skillet to seal them.

4Lower the heat and cook for 5 minutes.

5Turn the fish over and cook for a further 4/5 minutes until the fish is cooked through,

6Drain on paper towerls and transfer to a warmed serving plate.

7Sprinkle the lime juice and chopped cilantro over the fish.

8Serve immediately with avocado relish and tomato and lime wedges.
