Ingredients
- 1/2 c. chopped onion
- 1/2 c. butter
- 4 medium potatoes, peeled and finely chopped
- 2 tsp. water
- 12 eggs
- 4 Tbsp. milk
- 1 c. diced fully cooked ham or 1/4 c. bacon bits
Directions

1In a skillet, cook onion in butter until tender.

2Add potatoes, water and 1/2 teaspoon of salt.

3Cover and cook over medium heat for about 10 minutes or until potatoes are tender.

4Stir occasionally.

5Beat together eggs, milk, 1/2 teaspoon salt and dash of pepper; stir in ham or bacon bits.

6Pour over potato mixture. Cook, without stirring, until mixture begins to set on the bottom and around the edges.

7Use spatula to lift and fold partially covered egg mixture so the uncooked portion flows underneath. Continue cooking over medium heat for about 4 minutes or until eggs are cooked but still glossy and moist.
