Franklin Pecan Cake

  • 1 lb. real butter
  • 6 eggs
  • 8 oz. candied pineapple
  • 8 oz. candied cherries
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 qt. pecans (measure before breaking)
  • 2 tsp. vanilla
  • 2 c. sugar
  • 4 c. all-purpose flour

Directions

    Cream the sugar and butter. Add beaten eggs.

    Mix 3 cups flour, salt and baking powder together and add to batter.

    Dice the fruit, chop nuts and mix with the other cup of flour. Add to batter with vanilla. Cook in greased and floured tube pan at 250° for 3 hours or until done.

    Do not use mixer.
