Freezer Peach Jam

Ingredients
- 2 c. finely mashed peaches (about 1 1/2 lb.)
- 4 c. sugar
- 1 tsp. powdered citric acid (buy at drug store)
- 1 c. water
- 1 box (1 3/4 oz.) powdered pectin
Directions

1Measure peaches into a large bowl.

2Stir in sugar and citric acid.

3Mix well and let stand until sugar is dissolved.

4Mix water and pectin in small saucepan.

5Bring to a boil; boil for 1 minute, stirring constantly.

6Stir into peach mixture.

7Continue stirring for 3 minutes.

8Ladle quickly into 5 one-cup (1/2 pint) containers. Cover tightly.

9Let stand until set, then store in freezer.

10(If jam is to be used in 2 or 3 weeks, it may be stored in refrigerator.)

11For softer spread, use 3 cups of prepared fruit and 5 cups of sugar.

12Proceed as directed.

13Apricots may be used in place of peaches.
