French Chocolate Mousse

- 3 oz. semi-sweet chocolate
- water
- 3 eggs
- vanilla extract
Directions

1Melt the chocolate, very gently, in a few drops of water. Don't stir it!

2The best way is to microwave it at 60% power until melted.

3Let cool to tepid (room temperature).

4Add then 2 egg yolks and a few drops of vanilla extract and stir gently.

5Beat the 3 egg whites until very firm, add to chocolate mixture, folding in gently.

6Finally spoon into serving dishes and chill until set, a few hours.
