  • 1 1/4 c. sugar
  • 3 eggs
  • 1/4 c. buttermilk
  • 1 1/2 tsp. vanilla
  • 1 1/4 c. coconut
  • 1 prepared pie shell

    Melt butter; beat in sugar and vanilla.

    Beat in eggs and buttermilk.

    Stir in coconut.

    Pour into unbaked pie shell.

    Bake for 10 minutes at 400°.

    Reduce heat to 300° and bake for 45 to 50 minutes or until golden brown.
