Pecan Brittle

Ingredients

  • 2 c. sugar
  • 1 c. corn syrup
  • 1 tsp. salt
  • 1 c. water
  • 2 c. pecans
  • 2 tsp. baking soda

Directions

    In heavy saucepan (I use a large iron skillet).

    Mix sugar, water and syrup.

    Cook, stirring, until sugar dissolves, using medium heat.

    Cook until soft ball stage.

    Stir in pecans and salt, stirring constantly.

    Cook until hard crack stage.
  7. 7
    Remove from heat and stir in oleo and baking soda.

    This will bubble up quite a lot.

    Pour out immediately on buttered cookie sheets.

    Be careful, this is very hot.

    If you wish thinner candy, stretch the candy as it cools.
