- 1 qt. milk (4 c.)
- 1 3/4 c. sugar
- 1 c. heavy cream
- 6 egg yolks
- 3/4 tsp. vanilla
- 1/4 tsp. salt
Directions

1Scald the milk.

2Add the beaten egg yolks to which the sugar has been added.

3Cook over hot water like custard, stirring constantly, until the mixture coats a wooden spoon.

4Chill; add the cream and vanilla and freeze in hand or electric freezer, using 4 parts ice to 1 part ice cream salt.

5Makes about 3 quarts.
