French Onion Soup

- 4 tablespoons butter
- 2 tablespoons vegetable oil
- 2 lbs onions
- 1 teaspoon salt
- 3 tablespoons flour
- 32 ounces beef broth
- 32 ounces chicken broth
- 1 beef bouillon cube
- 1 loaf French bread
- 1/2 lb swiss cheese
Directions

1Slice onions as thinly as possible.

2Melt butter and oil over low heat in large dutch oven or soup pot.

3Brown onions slowly until golden brown. This step should take 20-30 minutes.

4Sprinkle with flour, cook and stir 2-3 minutes.

5Add broths and bouillon cube.

6Simmer partially covered for 45 minute.

7Top with toasted french bread and Swiss cheese and melt under broiler.
